What Sets Us Apart

Our artisanal pasta is superior to commercial pasta in many ways. Most pasta is “extruded” in large batches, formed by heat and compression resulting in a product that is dense, absorbs little sauce, and is hard to digest. Our “rolled” pasta requires more labor, but results in an extraordinary product; exquisitely delicate it absorbs flavors instantly and is easily digestible. Made with high protein Canadian durham wheat semolina, fresh eggs, and pure flavors it is highly nutritious with a beautiful texture.

All of our pasta is made in small batches, by hand, using real foods; spinach, tomato paste, squid ink, and saffron threads. The care and love that goes into each batch makes ours the best and most gorgeous pasta you’ve ever experienced.

Italians say “l'occhio violence la USA parte..." the eye wants its part! And while it’s true, our pasta might look too beautiful to eat, let they eye have its part and then give the tastebuds their share.
